I prepped ahead and made a big batch of both on Sunday and have had a brown rice and lentil bowl for dinner two nights this week. Brown rice is one of my favorites, as it's not terribly fussy and it goes well with any combination of flavors. I typically have short-grain brown rice on hand, but long-grain brown rice works just as well. While choosing a brown rice, try the Kerala red rice, which is a finer variety of brown rice.
Steps to make Brown Rice Dinner:
- Cook the rice in the beef stock. (Usually takes about 40min)
- While rice is cooking, chop/dice/slice all veggies. When prepped, add kale to rice and continue cooking.
- In a sautee pan, heat oil, then add garlic and onion. Cook until clear, or just before beginning to brown on edges.
- Add carrots, green pepper and water. Boil until water is almost evaporated, or carrots are tender.
- Add ground beef and bacon, simmer for about 5min.
- Mix with rice and serve:-) Ours was yummy!!!! (even my 2year old loved it!)
It is easy to cook than the regular brown rice or brown basmati rice. Brown rice, however, tends to come out a bit mushy and overcooked. But, as I recently discovered, if you cook brown rice on the white rice setting, it comes out perfectly, with distinct chewy-tender grains. Literally, the perfect brown rice. *Nutrition information is a rough estimate calculated with the lesser amounts of brown sugar and I made this rice for dinner and the combination of flavors are delicious! Instant Pot brown rice is a hands off way to cook fluffy brown rice!
