  5. After the cheese has drained overnight, carefully invert it onto a lightly oiled baking sheet (removing cheese cloth or kitchen roll).
  6. Bake at 325F (165C) for 20 to 30 minutes for a just set spreadable cheese or 350F (180C) for 30 to 40 minutes for a more set, more crumbly yet still creamy cheese. Will turn browner in colour.
  7. After cooling, place in airtight container and store in fridge. It will firm up after chilling.
  8. If using ground almonds this speeds up the process as there is no need to soak the almonds overnight. Can add Nutritional Yeast or cashews. No need to bake if the cream cheese obtained following blending is preferred.
