  4. Tip the vegetable into the lentil mixture, then stir in the cheese(leave some for later to put on top), breadcrumbs,coriander.Mix well and season.
  5. Spoon the mixture into the prep loaf tin and baked for 50min after add the rest of the cheese and bake for next 5-10min. Cool in the tin for 10min before cutting! You can eat warm or cold! Enjoy!

Lentil loaf is a very economical, easy, and healthy vegan recipe for families on a budget since it's made from just a few inexpensive ingredients. Made as written with the addition of half an onion and a few cloves of garlic, which I sautéed with the mushrooms.
