Carrot fudge:

  1. In a pan add 1 tablespoon ghee and sauté the grated carrots for 2 to 3 minutes. Add 1 cup milk powder and mixed nuts and add 3/4 cup of milk and cook for another 3 minutes. Keep stirring the mixture.
  2. Now add sugar and cook until dissolved. Add coarsely ground cashews and keep stirring until it forms a lump. Add 1 tablespoon of ghee and stir and remove in a plate to cool the mixture for about 10 minutes. Once cool make small balls and give them shape and garnish with almonds.
