- Prepare 1 packet frozen sole fillets
- Take 5-6 large onions cut into round slices
- Prepare 3 tomatoes, grated
- Take 2-3 cloves garlic
- Get 4-5 potatoes

Dover sole fillet happened to be on sale at the fish counter of my favorite grocery store the other day; but you could certainly use other fish fillet options. The time depends on the thickness of the fish. In a small bowl, combine the butter, dill, onion powder, garlic powder, salt if desired and pepper. Transfer to a large skillet; heat on medium heat until melted.

- Make sure that the fish is almost covered with the onions.
- Bake in a preheated oven at 170°C for about one hour.
Add the sole and saute several minutes on each side or until fish flakes easily with a fork. "Plaki" is a Greek way of cooking fish in the oven with tomatoes, potatoes and herbs. It's a popular cooking for big or medium-sized fish such as red snapper, blackfish, cod, flatfish (common sole), sea bream, sword fish (we suggest you don't use salmon, tuna or fish with pink/red meat). Plaki is a Greek method of cooking fish with vegetables. I first had this at a little neighborhood Greek restaurant here in my hometown. It was just around the corner from where I worked, so it was a popular lunch spot.
