Here is the mise en place, though I forget to include the fresh thyme. You see the broth, shallot, grated parmigiano, walnuts, butter, a red pear, taleggio, white wine, arborio rice. Minced shallot goes into some butter and olive oil. Once it is translucent, in goes the rice.

Steps to make Taleggio cheese, pear and thyme risotto:
  1. Fry onion gently in olive oil. When softened, add rice and cook for about two minutes. Add wine and let it evaporate.
  2. Add about 3/4 of the stock. Simmer gently. Chop the cheese and peel and chop the pear. Add to rice after about 10 minutes. Towards end of cooking time add thyme and check for salt. Should take about 20 mins in total
  3. Add butter and stock if needed. Stir until creamy. Serve and enjoy 😀

Pear goes very well with thyme, and the addition of parmesan cheese adds a lot of taste to the dish. This risotto goes perfectly with this recipe for baked chicken breast (lemon thyme chicken). I served it with a small salad on the side - it was light and packed with flavour dinner. This cheese is quite strong and goes lovely with the sweet pear and fragrant thyme. The cheese comes from northern Italy and despite the strong flavour it is a soft cheese.
