Place one spring roll or egg roll wrapper onto a piece of parchment paper at a time, to prevent them from drying out. I think I had you at the title of this recipe! These shrimp spring rolls are not your typical spring rolls.

The ingredients needed to make Cheese Spring Rolls:
  1. Take Spring Roll wrappers
  2. Take Cheese block, sticks or slices
  3. Take Crab sticks (optional)
  4. Make ready 1 egg - lightly beaten

This version is a chilli cheese spring rolls. The filling is a simple one with cheese, chillies and coriander. I used my leftover phyllo pastry sheets from my baklava recipe Cream Cheese Spring Rolls Recipes. Add cheese and mix thoroughly, until cheese begins to melt.

Steps to make Cheese Spring Rolls:
  1. Cut cheese into few inches long. Or if using cheese slices, stack them in two, then, cut into preferable size. Cheese slices kinda better as some cheeses are extra creamier & melt beautifully. Next, Cut & slice crab stick the same length & size of the cheese - if using crab stick. Kids love plain creamy cheese with fried crispy wrapper skins. Very often, we use only cheese as the filling.
  2. Wrap cheese & crab stick (if using) in a wrapper. Seal the edge/end of the wrapper with beaten egg.
  3. Deep fry over medium heat until lightly brown & serve with cheese sauce.

Remove from heat, strain in a fine mesh sieve to remove excess moisture, and let cool. Gently add the spring rolls one at a time, frying in small batches. Spring rolls are a literal translation of chūn juǎn (春卷) in Chinese. Although they are known all over the world as filling wrapped in some kind of dough, there are a number of spring roll recipes available throughout Southeast Asia and beyond.
