Meanwhile, for the pak choi tempura, place the vegetable oil into a deep, heavy-bottomed saucepan and heat until a small cube of bread sizzles. Combine the dashi, soy sauce, and mirin in a small saucepan. As soon as the dipping sauce comes to a boil, turn off the heat.
