- Start by preparing the vinaigrette, in a small bowl mix the sliced onion, vinegar, salt, sugar and pepper and leave to marinate. I tend to do this in advance; the longer the better you end up with a scrumptious pickled onion marinade.
- Wash the ladyfingers, cut the end bits, place in a bowl or microwave steamer drizzle with some water and a little sprinkle of salt. Cover and steam in the microwave for 3-4 minutes
- Test the okra if cooked by inserting a sharp knife if soft but still with a crunch then it’s perfect.
- Empty in a serving dish drizzle with the marinated onion vinaigrette give it a good stir. (Adding the vinaigrette to the warm okra help to absorb the juices from the marinade)
- Leave aside until its cold before serving. Really delicious and healthy dish.
