Genoa Cake There are various versions of this cake. I always add extra cherries, personally I prefer the cherries. THE HISTORY OF GENOA CAKE (PANDOLCE) Like every dessert that represents Christmas for a city, Pandolce (u pandùce, in Genoese dialect) better known in the UK as Genoa cake, has its own story, or better its stories, to tell. According to someone, the oldest origins of this cake dates back to Persia, where the first day of the year it was tradition to give the king a sweet bread.

Instructions to make Genoa Cake:
  1. Set the oven to 180C/fan 160/gas 4.
  2. Line a baking loaf tin with baking parchment paper.
  3. Add the butter and sugar to a large mixing bowl and beat until the mixture has become light and creamy. Then slowly beat in the eggs until the mixture has become smooth.
  4. Then add all the remaining ingredients to the mixture and stir well.
  5. Transfer the mixture to the cake tin.
  6. Transfer to the preheated oven and bake for 60 minute to 70 minutes.
  7. To test if the cake batter is cooked stick a skewer in the middle of the cake, if the skewer comes out clean its done.
  8. Allow to stand for 20-30 minutes in the tin. Then transfer to a cooling rack.
  9. Enjoy with your coffee or tea.

Cut the cherries into quarters, put in a sieve and rinse under. I was at my parents' last week. It inspired me to have a go at making something just as moist and fruity, with lots and lots of cherries. This is what I came up with. Beat egg whites and cream of tartar until soft peaks form.
