The ingredients needed to make Coriander Rice:
  1. Get 1 . Rice - 1 cup
  2. Prepare 2 . Coriander - 1 cup chopped
  3. Prepare 3 . Green chilli - 1
  4. Take 4 . Onion - 1
  5. Prepare 5 . Oil - 2 tsp
  6. Get 6 . Ghee - 1 tsp
  7. Get 7 . Mustard - 1/2 tsp
  8. Prepare 8 . Urid dal - 1/2 tsp
  9. Make ready 9 . Cashews - 1 tbsp chopped (optional)
  10. Get 10 .Curry leaves- 1 spring
  11. Make ready 11 .Hing - pinch
  12. Prepare 12 .Coriander - for garnish
Instructions to make Coriander Rice:
    1. Wash and soak the rice for 30 min. Cook the rice by adding ghee and let it cool completely. Fry the cashew in little ghee and keep aside. - - 2. Now heat 1 tsp of oil in kadai add onion, green chilli and coriander saute for 3 to 4 minutes. Let it cool down and grind into smooth paste. Keep aside. - - 3. Heat remaining oil in kadai add mustard, urid dal, curry leaves and hing.
    1. When it starts to splutter add the coriander paste. saute for just 5 sec. Now add the rice mix well. - - 5. Garnish with cashews and coriander. Serve with cucumber raita or any of your choice.
