Vissinada is one of the most favored of current trending foods on earth. It’s enjoyed by millions daily. It is easy, it’s fast, it tastes yummy. Vissinada is something which I have loved my entire life. They are fine and they look wonderful.

Here in Greece we associate vissino with the summer, mostly drinking vissinada which is the syrup of the vissino mixed with water. But it is also perfect with Greek yogurt or ice cream and if you are making a cheese cake, vissino is perfect as a topping. But really, eating a spoonful plain with a glass of cold water is the best.

The ingredients needed to make Vissinada:
  1. Prepare 1 kg sour cherries
  2. Make ready 1 kg sugar
  3. Get 2-3 tsp lemon juice

Especially as the weather gets warmer, the days get longer, and we remain in need of some nice treats to help get us through the day, there is nothing better than something nice and fancy to sip. Sour cherry soda, or vissinada, matches the orangeades in amount of fruit juice. Tangy, refreshing, and gorgeous cherry red, it is a great favorite with children.

Instructions to make Vissinada:
  1. Wash the sour cherries, remove their stems and squeeze them in a strainer to get all their juice out.
  2. Rinse the skins and stems with a little water and add it to the juice.
  3. Place the juice and the sugar to boil and thicken into a syrup, not too thick as that of the spoon sweets.
  4. Finally add the lemon juice, remove from heat and when the vissinada cools store in clean, dry bottles.
  5. Pour 1-2 fingers of vissinada into a glass and add water.

Grownups sometimes add a splash of it to a glass of ouzo (although it usually triggers wild objections from others at the table - still orangeade is a more accepted mixer). Moments later, owner Maria Kefalas came out with a bottle of water, two cups of tea and a glass of sour cherry vissinada juice - arranging each perfectly on the table in front of us. Suggested dilution: One part juice - six parts water.
