In a heavy bottom saute pan add the oil and whole spices. Cook the rice following pack instructions. This one-pan shrimp and rice is just that. Quick, easy and packed full of flavor.
Instructions to make Prawns Rice:
- Steam rice in a vessel upto 80%
- Marinate prawns in ½tsp on turmeric and 1tbsp lemon juice and ½tsp chilli powder
- In a kadai or wok, add oil and let heat
- Add in cardamom,cinnamon,cloves,pepper corn, star anise and bay leaves
- Add in onion and let fry until golden brown
- Add in ginger garlic paste and saute
- Add in tomatoes and saute until it becomes juicy
- Add coconut mixture and saute
- Add in biryani masala, garam masala, turmeric,chilli powder, dhania powder and mix well until it leaves oil from edges
- Add in marinated prawns and salt and saute well
- Add 3 to 4 tbsp of water
- Cover it with lid
- Add water on lid and let it cook on medium to low flame
- Add water if required to avoid bottom burn
- Mix rice well once prawns are cooked
- Add in lemon juice, and sprinkle pudina and coriander leaves
- I have added some fried prawns to enhance the dish
- Serve hot
To make this dish you will need jumbo shrimp that has been deveined and clean, quick cooking rice (basmati or minute rice), onion, garlic, and spices. I like to drizzle some freshly grated parmesan on the dish at the very end but that's totally optional.
