Lau Die Tetor Dal is a very healthy and light dal made without onion and garlic, but is flavored with green chilies, ginger and mustard oil. Yellow lentils( Moog dal ) along with bitter gourd. It also has bottle gourd( Lau ), and as the bitterness blends with the soft bottle gourd and lentils, this dish does not taste that bitter, rather it has bitter-sweet medley. Tetor dal is my mom's specialty.
Instructions to make Tetor dal(bitter dal):
- Soak and boil the dal adding salt and turmeric powder
- Heat oil in a pan add nigella seeds, celery seeds and red chilli
- Add the bitter gourd and fry well till it is crisp
- Add the bottle gourd sliced stir fry well adding salt and turmeric powder
- Pour the daal and boil until the vegetables are tender
- Add sugar and desiccated coconut
- Serve it with steaming hot rice with a garnish of desiccated coconut.
I have never tasted such mouth-watering dal anywhere. And, after all no restaurant not even Oh! Calcutta or some Bengali specialty restaurant will serve tetor dal, whatsoever.
