- Prepare 50 g Pecorino Romano
- Get 1 stock cube (Beef, Chicken, or Vegetable)

Instructions to make Polenta Chips:
- Boil the water in a pot and add the stock cube.
- Gradually whisk in the polenta until it reaches a thick polenta reaches a porridge like consistency.
- Once the polenta is ready, add the cheese and butter and continue to mix in off the heat. Once mixed in we'll, allow to cool a little bit.
- Line a baking tray with cling film and pour in the mixture into the pan.
- Once fully cooled, place in the fridge for at least 20mins.
- When ready to cook, pre heat an oven to 190°C fan.
- Remove the polenta from the fridge. Turn it over onto a chopping board and peel away the cling film.
- Cut into chips and place on a baking tray lined with baking paper. Drizzle with vegetable oil and place in the oven for 35mins or until browned.
Carefully fry the polenta in batches (for about four to five minutes) and drain on paper towels. Once cool cut into chips and place on a non-stick baking tray. You can keep polenta up to two days in the fridge, spread out on a baking tray and wrapped with a plastic foil, until you make polenta chips. Save the rest of polenta for another meal.
