  4. Simmer for about 10 mins.
  5. Put the mix in the blender and blend for a minute or so til smooth.
  6. Line a baking sheet with baking paper. Pour the apricot mix onto the sheet leaving a couple of centimetres free at the edge.
  7. Bake for about 4 hours. The paste dries out but needs to be slightly sticky when you touch it.
  8. When it’s ready, cut (with scissors) the paste/ paper into strips. You can roll the paste while still on the paper - or take it off first and then roll.
  9. Peel the fruit off the paper and enjoy 😍 Keep in an airtight container in the fridge… if you don’t finish it off immediately!
