Fry the carrots, celery, brown onion and leeks for around five minutes, stirring frequently, until the vegetables are fragrant. Add the flour and stir to combine. Add the tomato passata and about two cups of water, stir, and place the whole chicken into the pot. Add enough water to just cover the chicken.

  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖
