The only challenging part of preparing this recipe will be having the patience to let the ice cream freeze before helping yourself to a sweet spoonful. Instead of using milk to blend, add a splash of orange or pineapple juice. Sprinkle the reserved vanilla wafers evenly on top. Cover the ice cream with plastic wrap, gently pressing the wrap into the surface of the ice cream, and transfer to the freezer.

Steps to make Rujak (Banana) Ice Cream:
  1. Mash overripen bananas, mix with coconut milk (or heavy cream). Freeze. If you have a blender, you can blend once after it froze to get air inside, other wise just scoop it later. (this is at least 2 hours before serving)
  2. Boil water, add tamarind, sugar, and chili powder. Add peanut butter. Wait until it boils, correct the taste (it should be sweet and spicy). After it cools, put it in the fridge.
  3. Just before serving, grate the cucumber, pineapple, and mango. Set them inside 4-6 bowls. Scoop about 1-2 tablespoon of peanut sauce for each serving. Add the banana ice cream (or store brought ice cream, preferably coconut ice cream or vanilla, but chocolate is good for more funkier taste) on top.

To make banana ice cream, start by peeling ripe bananas and freezing them overnight. Once completely frozen, use a sharp knife to cut the bananas into small pieces. If you like, stir in extra ingredients such as chocolate chips, vanilla extract, or peppermint oil. Peel bananas from the parchment paper and place in the blender. My favorite way to eat it is as soft serve right out of the blender but you can also freeze so it's firm enough to scoop into ice cream cones.
