- Spread oil in a cake tin. - Preheat oven at 170℃.
- Soften butter with room temperature (or use microwave low power for 1 minute). Put butter and half sugar into a bowl and mix well.
- Add eggs and rest of sugar and mix until smooth.
- Shift flour, cocoa powder and baking powder together into the bowl in two additions, alternating with buttermilk.
- Add hot water bit by bit and mix well.
- Pour the batter into a cake tin. Bake it in the 170℃ oven for 35-40 minutes.
- Check with a stick, if it's dry, it's done! (or touch sponge lightly if it bounce back.) - Once it's cooled down, enjoy with your favourite icing!

- For chocolate lovers… - [Chocolate icing] - 100g Cream cheese - 50g Icing sugar - 30g Butter - 20g Cocoa powder
