- Divide the mixture into the two tins and place on the same tray in oven for 20 minutes. You’ll know it is done when you stick a cocktail stick in the middle and it comes out clean.

- Once the sponges have cooled to room temperature, whip the double cream to soft peaks and add the cream cheese, icing sugar, lime zest and juice. Spread the soft cheese mixture across one of the sponges and place the second sponge on top.

- Combine the caster sugar and lime juice and drizzle over the top of the cake. Feel free to add more zest to the top of the cake to finish the cake.
