Instructions to make Dried fish Stew:
  1. Soak fish in hot salt water for about 10 minutes, debone and set aside.
  2. Heat up oil, add sliced onions and fry for about a minute or until you start smelling the nice aroma. Add tomatoes paste and stir fry for 2 minutes, add Maggi, spices, crayfish and stir, then add fish and allow to simmer for about two minutes then taste for salt. Cook on a very low heat for 5 minutes and turn off heat.

Prep the fish: de-scale fish and cut into steak, add to a bowl and rinse with water and lemon juice. Then transfer the fish to a colander to drain excess moisture. The seasoning we add to the fish goes into the fish to make it taste better while the juice from the fish goes into the surrounding water to give it some nice taste that will make the stew delicious. This boiling process helps toughen the fish thereby preventing it from disintegrating in the stew. I love this fish stew because, you can prepare it with any type of fresh fish you have, although in Lagos state, most people prefer to cook with the Obokun fish (tilapia) or Catfish, Titus(Mackerel) but any fish will do just fine.
