  4. Add the vegetables & herbs, cook for 8 mins still starting to soften. Add tomato purée cook for a further few minutes. Turn up heat & add white wine & reduce by half.
  5. Add tomatoes & stock & bring to the boil.
  6. Place chicken back in the pan & simmer for 20/30 mins. When chicken is cooked on point remove & set aside. Boil sauce rapidly till it starts to thicken.
  7. When ready season & serve with lemon zest & parsley

My husband is not a fan of dark meat chicken but in this recipe you would think you were eating veal. Osso Buco is an Italian dish made with veal shanks, browned and simmered with tomatoes and vegetables. To Serve Chicken Thigh Osso Bucco. To serve, place the chicken thigh osso bucco on top of creamy mashed potatoes (or polenta). Spoon some of the leftover sauce and veggies over the top of the chicken.
