Chicken breast: I feel strongly that this is best made with thigh because it's got more fat so you get beautiful caramelisation. But it's still super tasty made with chicken breast.

- In a large non stick pot add some olive oil. Pop in all your veg, garlic and parsley. Allow to sizzle fro a couple of minutes at a medium to high heat. Then add your chorizo to the mix.
- After a couple of minutes add the chicken, crushed chillis and the paprika to the pot allowing it to turn white. Turn the heat to low.
- Add the arborio rice,stir, the chicken stock and then the tomatoes. Not forgetting the salt & pepper too! Give it a good stir then cover the pot and allow to simmer for about 15 mins. Add the Parmesan and cover again.
- Lift the lid after the 20 mins, the rice should be cooked, not an overly soft grain. If it feels a bit too firm just leave for a few more mins. Serve with a nice fresh bread or tossed salad!
