  3. While pepper is cooking chop the onion and garlic and fry with a little oil for 5 mins
  4. Add the tinned tomatoes to the onion and garlic and cook for another 5 mins on a medium heat
  5. Add the cooked boiled rice, coriander, pinch of salt and pepper and cook for a further 2 mins
  6. Spoon the mix into the pepper halves and top with the goats cheese. Cook for a further 15 mins at 200°c or until the cheese starts to colour and melt
