  7. Take Phyllo pastry (I used 6 sheets from a pack and froze the rest)
  8. Make ready Vegan butter or oil of choice to brush phyllo

This vegan spanakopita is hands down the absolute best you've ever had! My mom has a famous spanakopita recipe. It's the only one I will eat, and anywhere she goes people ask her to bring it. My friends ask for it for their birthdays and my boys will take down the entire pan in a matter of minutes.

Instructions to make Vegan Spanakopita:
  1. Add all ingredients together in a bowl and mix well, tofu will break up
  2. Take 2 sheets of phyllo and brush each with butter
  3. Put the sheets on top of each other and then divide this double sheet into four strips
  4. Add a heaped tbsp of the mixture to the end of the strip
  5. Fold it into a triangle, criss crossing until you have a samoosa shape
  6. Brush with more butter and put on a baking sheet
  7. Put in a preheated oven (160deg) for 20mins or until golden and crispy
  8. Serve with chutney!

I have wanted to make it vegan for years. A Note on Vegan Cheese for Vegan Spanakopita. Now, this isn't any old vegan spanakopita. A lot of spanakopita recipes call for both feta and ricotta cheese. So, we're going to be making BOTH vegan feta and ricotta from scratch (using a good food processor!), then mix them up with spinach.
