In a small bowl, mix together the mayonnaise, minced dill, lemon zest, and salt. Season the salmon with ½ teaspoon salt and ¼ teaspoon pepper. This wonderful Dill Mustard Sauce really compliments the salmon's delicate flavor. The moist fresh taste of the salmon and dill just seem to go together as if they were made for one another.
Steps to make Salmon with dill:
- Chop the dill and mix with the lemon juice, garlic, olive oil and some black pepper
- Smother the salmon with the mix and pour in the remaining liquids. Spoon some mayonnaise on top of the salmon and gently spread
- Cover and leave in the fridge. I left mine for 1 hour
- For the BBQ I cut a strip of foil and brush Olive oil on one side. Place the foil on the bbq and cook the salmon skin side down. I cooked for 5 mins and then turned the salmon on each side cooking for 5 mins on easy side. 20 mins in total. For the last few minutes I covered the salmon and closed bbq. The skin was lovely and crispy and the salmon was nice and succulent:)
- I have this with plain rice with a little soy sauce and a nice salad.
