- Prepare 1 cup Coconut Milk
- Take 2 tsp Salt

- Make ready 5 English Cucumber (Sliced)
- Take 4 Kiwi (Sliced)
- Get 2 Yellow Bell Pepper (Julienne)
- Prepare 2 Red Bell Pepper (Julienne)
Add quinoa, mix and cook for a minute. Add salt and warm vegetable stock, mix and bring to a boil on high heat. Reduce heat, mix, cover and cook till quinoa is fully done. Transfer into a serving bowl and serve hot garnished with torn coriander sprigs.
Steps to make Quinoa Pulao (Presentation inspired by Hawaiian Poke Bowl):
- Wash the quinoa. Set aside.
- In a cooker base, heat oil. Saute bay leaf, cinnamon, cloves, star anise and cardamom.
- Stir in the grated ginger and slit green chilli. Saute.
- Now add chayote & cauliflower. Cook on high flame with stirring for 3 mins.
- Add 2 cups water and 1 cup coconut milk.
- When it comes to a boil, add the washed quinoa.
- Top with mint leaves. Close with the cooker lid. Cook on lowest flame for 3 to 4 whistles.
- Scoop out half a cup of Quinoa Pulao into a bowl. Garnish with sliced cucumbers, sliced kiwi, yellow & red bell pepper juliennes. Avocado would be a fine addition if you could get your hands on it.
