Very handy as I came back from holiday feeling in need of a major injection of fruit and veg. Tomatoes were overflowing from my garden, so I came up with this soup.

Steps to make Tomato and Courgette/Zucchini Soup:
  1. Roughly chop onion and fry off in olive oil until clear but no colour
  2. Roughly dice courgette and crush garlic. add to the onion and fry for a few minutes. add the tomatoes
  3. Stir in sugar and Worcester sauce
  4. Crumble stock cube into the empty tin of tomatoes and half fill with water, mix until dissolved and add to the pan. bring to the boil, reduce to a simmer and leave for 10 minutes
  5. Roughly shred the basil and add. blend until smooth. season and serve
  6. I served with crusty bread and another drizzle of Worcester sauce

Serve with good crusty bread and salad. This soup tastes wonderful after simmering a long time. Sometimes I add cooked rice to give it a bit more substance. Chives work well with this courgette soup as they have a nice onion flavour, but you could use basil, mint or parsley instead. Add a little extra vibrant green colour and a nutrient boost by cooking some peas with.
