- When the garlic start to release aroma then add the courgettes, toss for 3-4minutes, doesn’t need to get “cook”, actually you can eat it just like it is in a salad, but this step is just to warm it up,now you are ready to put the last ingredient: parsley/ basil. Place it on a plate and get ready to cook your fried egg, also an option is just to have it boil, which is a more healthier option, but that is up to you.

To prepare the noodles: Spiralize the zucchini with a spiralizer (here's how), or turn the zucchini into noodles with a julienne peeler, or grate the zucchini the long way on a large box grater. The pesto is creamy, flavorful, and coats the zucchini well.
