  7. Simmer till carrots start softening.about 4 mins then add more oil.let carrots cook in a bit more until tender..taste for spice/salt can add as more as required.(optional you can add a bit of lime juice or lemon zest..gives this a gr8 flavor)
  8. Add the pickled pepper pieces then cover and simmer about 2 mins until you can see oil at edges and the mixture has a bit of sauce but not liquidy.add the coriander
