There is a mistake in the recipe when they talk about lining the bowl with bread. If you're only going to make one pudding this summer, it's got to be a classic English summer pudding, when the soft fruits are in plentiful supply. Served with thick pouring cream, crème fraîche or clotted cream, it's one of the best tastes of summer I know.

The ingredients needed to make Summer pudding:

  2. Prepare 300 g strawberries, sliced
  3. Prepare 150 g blueberries

Great berries to use include raspberries, strawberries, red and blackcurrants, damsons, and blackberries. The berry juice is also very important, so make sure your berries are ripe. You can also use a mix of frozen berries too, just make sure they are. Summer pudding or summer fruit pudding is a British dessert made of sliced white bread, layered in a deep bowl with fruit and fruit juice.

Steps to make Summer pudding:
  1. Wash the fruits and drain them in a sieve. Put the sugar in a pan with splash of water and heat to simmer. Add all the berries and let simmer for about 2-3 minutes. Then turn off the heat.1. Now, using a strainer and drain the juice into a bowl.
  2. Line the pudding bowl with cling film, leaving hanging outside of the bowl.
  3. Cut the bread into thin slices and remove the crusts. Cut one slice of bread into a circle shape to fit the bottom of the bowl.1. Dip one side of the circle bread into the juices and place juice side down in the bottom of bowl.
  4. Repeat the same with thin slices of bread: dipping one side of the bread into the juices and placing them around the edge of the bowl, with dipped side facing outwards. Overlapping each slice slightly.1. Spoon all of the cooked berries into the bowl
  5. And top with another slice of bread, again soaked in the juices. Pour more juices top of the pudding and push down to compress the pudding.
  6. Fold the cling film over the top. Put a heavy weight on top and store in the fridge for 7-8 hours.1.

Always do my own proportions of fruit, based on what is available in the garden so it's a bit different every time but ALWAYS fabulous.
