- I used golden penny couscous and power oil.
- Pour couscous into pot, then pour a little salt and mix with groundnut oil, boiled water and cover it up immediately.
- Next step is for the sauce. Wash your meat and pour in a pot of water add Maggie and salt, then leave to boil
- When itβs done/soft, cut into tiny pieces. Add your red oil and blended onions and peppers. Leave to fry for a bit then add your meat and meat stock.
- The meat stock shouldnβt be much so as to allow the sauce thicken.
It's much easier to make than most grains or pastas and you can take the flavor profile with it anywhere. Choice of: chicken, shrimp, steak or ground lamb, stuffed with couscous, refried garbanzo beans, avocado, yogurt dill sauce, and charmoula sauce. The word couscous is derived from Arabic, but the dish is typically considered part of North African cuisine which includes Libya, Morocco, Tunisia, and Algeria. Still, it also plays a large role in Middle Eastern dishes. In a medium saucepan, bring the water (or broth), salt, butter, and oil to a boil.
