- Get 1 large potato, cubed
- Take 6 Cherry Tomatos, halved
- Take 1/2 White onion
- Make ready 1 pinch Fennel seed

- Get 1 Clove
- Make ready 1 pinch Cumin seed
- Make ready 1 clove Garlic
- Prepare 1 pinch Dried ginger
- Take 1 pinch Dried coriander

- Take 1 pinch Red chilli powder
- Make ready 1 pinch Sugar
- Get 1 tbsp Chilli infused olive oil
- Get 1 tsp Tomato puree
- Make ready 1 pinch Garam masala
- Prepare 1 bunch Fresh coriander
Aloo translates to potato and Gobi to cauliflower. This spiced potato & cauliflower stir fry is one of the popular Indian dishes & is prepared in most Indian homes. It goes well with plain rice, roti, paratha, naan or any flavored rice like Jeera rice or ghee rice. Wash the potatoes under cold water.
Steps to make Aloo Ghobi:
- Chop the cauli and potato and part boil, set aside.
- Heat the oil in a an, add the cardamom, fennel, cumin seeds and Clove and simmer for 2-3 mins.
- Finely slice the onions and add. Stir for another 2-3 mins to soften the onions but don't burn them.
- Add the Tomatos and a dash of cold water and simmer for 2 minutes. Add the tomato purée and stir.
- Add the cauli and potatoes, mix well and simmer for 5 minutes.
- Add the remainder of the dried spices, the salt and pepper. Stir. In a separate cup, add a tiny pinch of sugar and a tbsp of hot water stirring to dissolve the sugar into a syrup. Take a tsp of this and add to the pan, stir again then leave to simmer for another 5 minutes.
- Add the coriander at the end. Serve garnished with more fresh coriander and a tsp of plain unsweetened yoghurt as in the picture, however the yoghurt is optional.
Place in a large bowl, cover with cold water and set aside. Heat the oil in a medium-large lidded saucepan. Fry the onion, cumin seeds, star anise and salt. Line a rimmed baking sheet with foil. Spread in an even layer and roast, tossing once halfway through.
