Coconut rice is one of South Indian's favorite rice dishes made often for quick lunch or lunch box or festive meals. Finally add coriander and mint leaves. Once done flip the rice gently and serve.
Steps to make Thengaipaal Kathirikai Rice/coconut milk brinjal rice:
- Soak basmati rice for 30 minutes.
- Chop onion, tomato and brinjal. Make ginger garlic paste.slit two green chillies in center. Chop coriander and mint leaves.
- Cook soya chunks in hot water by adding little bit of water. Strain it once cooked
- Heat oil in a cooker add fennel seeds, bay leaves, cloves, cardamom and cinnamon stick
- Now add onions and fry till the onions turn golden brown.
- Now add green chilli and mix it and then add ginger-garlic paste.
- Next, add pudina and coriander leaves and mix it well for a minute. Next add tomato and stir it.
- Now add brinjal and mix it for a minute and then add soya chunks mix it.
- Add curd and mix it. Then add chilli powder, coriander powder, salt, turmeric powder and garam masala.
- Add one cup of coconut milk and two cups of water and once the water starts to boil add rice.
- Add one tsp lemon juice and mix it.
- Pressure cook it for two whistles in high flame.
- Serve it with raita
