  1. Wash the rice and fenugreek seeds and soak for 6 hours. The urad dal needs at least 3 hours of soaking.
  2. Grind the rice, dal, and fenugreek seeds to a smooth batter. Keep it in a warm area of the kitchen to ferment for 8-12 hours.
  3. In a nonstick flat griddle, spread some oil, heat over medium heat, and pour one ladle of batter on it.
  4. Spread it out into a circle up to 6 inches in diameter, or smaller if your ladle is smaller. Sprinkle some chopped onions, or diced tomato, or green chillies, or a combination on the batter. Pour a teaspoon of oil around the edges.
  5. Let it cook for 2-1/2 minutes, and flip. Let it cook again for a minute.
  6. Serve with spicy Indian chutney powder, or coconut chutney.
