Stir-fry salmon over medium-high heat, about five minutes. Turn salmon over gently so that all sides cook evenly. Be very careful with the salmon pieces so they stay intact - this was the hardest part for me; I didn't realize I'm quite the aggressive mad-woman stir-fryer! Add brown sugar and stir until slightly caramelised.

  1. Oven roast the salmon fillets at 190 C for 13-15 mins depending on how you like your salmon.
  2. Stir fry the veg in a little sesame oil for a few mins.
  3. Whisk all of the sauce ingredients together with a balloon whisk.
  4. Add the sauce to the veg and cook for a further 2 or 3 mins.
  5. Serve the veg with the salmon.

Add soy sauce and peanut butter and stir through. Repeat with remaining combined oils and salmon. Return all salmon to wok with ginger and toss to coat. Return vegetables to wok with vinegar, mirin and remaining soy sauce. A simple recipe using the evocative flavour of smoked salmon with tasty oriental seasoning.
