Switch off the flame and allow to cool down to normal temperature. Gajar Methi, a North Indian favourite of carrots and fresh fenugreek leaves combines bitter and sweet in an irresistible sauté. This dish is a particular special in winter when carrots are in. Fresh Fenugreek or Methi leaves are my other winter favorite after carrots.
Instructions to make Fenugreek met carrot &potatoes:
- Firstly remove the stem from fenugreek leaves then wash fenugreek leaves 2-3 times by changing water in the utensil and chop finely.. Wash peel and cut potato and carrot in desired shape..chop onion finely, ginger and green chilli finely
- Make a fried strip curl of carrot and keep aside
- Fry cutted potato and carrot in little by little of oil one by one and keep aside
- Heat oil in a pan and saute onion for about 2minutes then add ginger and green chilli and stir fry the mixture..add salt,red pepper powder and stir..add chopped fenugreek leaves and cook for 5 minutes on medium heat by covering the lid..Add fried carrot and potato and give a good mix, slow down the flame and cook 5 minutes more by covering the lid
- Add garam masala and stir well..heat off
- Your fenugreek met carrot and potatoes is now done
- Transfer in a serving plate or a bowl, decorate with carrot strip curl
- Serve hot with chappati or lachha paratha
