Steps to make Tomato chutney:
  1. Wash & drain the fresh tomatoes
  2. Grease a non stick pan with olive oil and fry the tomatoes on high flame for few min or until turned dark(bit like burning)
  3. Once dark & soft add in the chopped tomatoes and fry until colour changes to dark and the sauce reduces to half then put aside to cool down a bit
  4. On another pan cut & slice the onion & garlic very thinly and pan fry until golden brown
  5. Cut the chillies & corriander into small pieces, add desired salt and mix it together with onion & garlic, at this point add in the tomatoes and mix again until everything is mixed properly. Make sure to mash the tomatoes with your fingers while mixing so that it blends in properly

Apart from the tangy taste of the tomatoes, there is one more ingredient in this chutney which gives a distinct warm aroma and flavor to the chutney - cloves. I just added two cloves and found it gave a really good strong aroma to the chutney. typically, a tomato chutney is prepared from just ripe tomatoes. however, some even add onions as well while frying to make it more acidic and spicy. according to me it is a totally a different recipe and it is known as tomato onion chutney. in addition, fresh coconut or desiccated coconut is added while grinding. adding coconut would certainly enhance the taste of tomato chutney, but reduces. Peel and finely slice the onions, roughly chop the tomatoes and deseed and finely slice the chilli. Put everything in a pan, season to taste and stir well to combine. Pour into a sterilised jar and leave to cool.
