  3. Layer alternate tomato halves, pieces of cheese and red onion in the middle section of each pastry rectangle - Brush the top with olive oil and sprinkle on the oregano - Season with salt and pepper - Return to the oven for 15 minutes

Sprinkle with the remaining cheese and oregano. Add the Tate & Lyle Dark Soft Brown sugar and balsamic vinegar and cook for another minute or so. Spoon the onion and tomato mixture onto the centre of each pastry rectangle. Spread the onion mixture over the pastry up to the rim, then top with the halved tomatoes. Sprinkle on the cheeses in a single layer, then lay on the caramelized onions, then sprinkle the tomatoes over the cheese.
