Instructions to make Paneer Butter Masala:
  1. First defrost the paneer.
  2. Cut the onion, tomatoes, ginger, garlic and chillies, keep aside.
  3. In a wok add 2tbsp ghee (if butter then add 1:1 ratio of butter and oil).
  4. Once the ghee is hot add cumin seeds and other spices (cloves, bayleaf and cinnamon)
  5. Later add chilies, onion, tomatoes, and cashews. Let it cook for 1-2mins until the onion gets colorless.
  6. Then, add chili powder, turmeric powder, and coriander powder. Saute it well and cook for 2mins. Keep it aside and let it cool.
  7. Keep aOnce it's slightly cool grind the mixture to a paste.
  8. Heat a wok, add a tsp of ghee and add the mixture, simmer the flame and add half a cup of water and mix it well.
  9. Later add Garam masala, salt, and sugar. and let it cook for around 3 to 4 mins until the oil starts to separate from the mixture.
  10. Heat a pan, add a tsp of ghee and fry the paneer to get a crispy coating.
  11. Add the crispy paneer to the mixture and finally add fresh cream.
  12. Serve it hot.
