  5. Don't boil them for too long because they will break apart, I boil them at most 20 minutes!
  6. Remove from water and peel right away. If they cool, it is harder to remove the shells and skins.

Choose chestnuts at the store that are fresh and large. Once they are purchased, boil and consume the chestnuts within a few days because these starchy nuts spoil quickly. When they are finished boiling, strain the water and place the chestnuts scored-side up on a parchment lined baking sheet. The flesh should still be moist. Chestnut flour doesn't keep well, but can be frozen, well wrapped, until needed.
