Steps to make Homemade Granola:
  1. Add the coconut oil, honey, cinnamon and salt to a pan and heat on a low heat until it has all melted, stirring occasionally.
  2. Once it has all melted, take off the heat. Add the vanilla extract and stir until it has mixed in.
  3. Add the oats and stir to coat.
  4. Spread out thinly on a baking tray and place in the oven at 140c for 20-25 mins. The edges will start to turn golden.
  5. Leave to cool and then transfer to an air tight container. It will break up as you do this which is exactly what you want. (Add any other nuts and dried fruit at this point) Store in a dry cupboard. It will easily last for a couple of weeks.
  6. Serve as you wish!

Brown sugar is a granola staple but feel free to branch out. Mix oats, brown sugar, coconut, wheat germ, cinnamon, and nutmeg together in a large bowl. Stir water, oil, and vanilla extract into the oat mixture; spread onto a baking sheet.
