Bottle gourd curry, lauki sabzi or dudhi sabji is something I that make more with bottle gourd other than the dal. This lauki sabzi is very easy, simple and made with minimal ingredients and it goes well with roti, paratha or with dal-rice, rasam-rice etc.
Steps to make Potato sabji in buttermilk curry:
- Heat a wok and add oil in it.
- Once oil is heated add cumin seeds and asafoeteida in it. Saute for a minute.
- Now add Onion and garlic cloves. Fry them till Onion changes it's colour.
- Now add tomato and green chilli. Cook it well.
- When tomato becomes soft and mushy add all the spices. Cook them.
- When spices are cooked add boiled potatoes and mix it well.
- Add salt and mix everything properly. Cook it for 1 minute.
- Now add buttermilk in it and stir continuously till first boil.
- After first boil lower the flame and simmer for about 5 to 10 minute.
- After getting desired consistency turn off the flame.
- Your potato sabji in buttermilk curry is ready to eat.
Normally I make this dudhi sabzi with roti or when I want..gluten-free. Potato Peas Curry is also known as Aloo Matar Ki Sabji in Hindi ie Aloo means potato, Matar means peas and Sabji means Curry. This recipe can be made different ways like dry ,semi-dry or gravy version. Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil.
