- Wash the fresh crayfish
- Cut off the Crayfish legs. Be careful not to cut off their claws as there is plenty of meat in these as well
- Heat up some oil in a wok and then add all the spices and fry until you smell the aroma of the spices
- Add the fresh Crayfish into the wok and fry together with the spices
- Add boiling water to the wok until it covers all of the crayfish
- Add oyster sauce, cooking wine, salt, sugar and chicken power and stir the Crayfish. Boil the Crayfish for 15mins with the lid on the wok
- When finished take the Crayfish out and place them onto a plate ready to serve
