Bitter gourd is the main ingredient of this dish and the other vegetables in this recipe are pumpkin, plantain, sweet potato, ridge gourd, drumsticks, eggplant and raw papaya. Dried lentil dumplings (badi) is also a important ingredients for making sukto. Sukto is a traditional Bengali recipe. It is also popular in Bangladesh.

Instructions to make Sukto:
  1. Heat oil and fry the bitter gourd adding salt and turmeric powder and keep aside
  2. Now fry the brinjal slices well adding salt and turmeric powder and keep aside
  3. Add oil fry the lentil dumplings and keep aside
  4. Temper celery seeds and red chilli whole
  5. Add the remaining vegetables and fry well adding salt and turmeric powder and cover it for 10 mimutes
  6. Add the fried gourd and brinjals
  7. Add the poppy seeds and mustard seeds paste mix and combine well
  8. Finally add lentil dumplings and sugar
  9. The sukto is ready to be served

It goes best with steamed rice. Traditionally this is taken at the start of the main meal. The vegetables used to prepare sukto is available throughout the year. Sukto is a traditional Bengali dish made many vegetables & at least one bitter vegetable with a pinch of sugar to adjust the bitterness. Without this typical Bengali menu is just incomplete.
