  2. Take 3-4 bitter gourd

  5. Take 1-2 sweet potato

  7. Prepare 2 tablespoon mustard seeds
  8. Get 1 tablespoon poppy seeds
  9. Prepare 6-7 lentil dumplings (vadi)
  10. Prepare 1 teaspoon celery seeds
  11. Prepare 1 dry red chilli
  12. Make ready 1 teaspoon turmeric powder
  13. Prepare To taste salt and sugar
  14. Get As needed mustard oil

Bitter gourd is the main ingredient of this dish and the other vegetables in this recipe are pumpkin, plantain, sweet potato, ridge gourd, drumsticks, eggplant and raw papaya. Dried lentil dumplings (badi) is also a important ingredients for making sukto. Sukto is a traditional Bengali recipe. It is also popular in Bangladesh.

Steps to make Sukto:
  1. Cut all the vegetables into uniform size
  2. Roast the lentil dumplings in oil
  3. Add more oil in the pan and add the whole celery and dry red chilli to temper
  4. At first fry the bitter gourd and keep aside
  5. Now fry the egg plant pieces,keep aside
  6. Add rest of the veggies,saute adding salt and turmeric powder
  7. Cover the veggies and stir occasionally
  8. Make a smooth paste of mustard and Poppy seed
  9. Now add the fried bitter gourd,brinjal and lentil dumplings
  10. Add water and cover it for 10 mnts or so
  11. Finally add the paste and sugar,mix well
  12. Sukto is ready to be served

It goes best with steamed rice. Traditionally this is taken at the start of the main meal. The vegetables used to prepare sukto is available throughout the year. Sukto is a traditional Bengali dish made many vegetables & at least one bitter vegetable with a pinch of sugar to adjust the bitterness. Without this typical Bengali menu is just incomplete.
