The ingredients needed to make Shukto:
  1. Prepare 1 bitter gourd
  2. Get 2 drum sticks
  3. Take 1-2 sweet potatoes
  4. Get 1 raw banana
  5. Make ready 1 brinjal
  6. Get 1/4th of a raw papaya
  7. Take 1 cup or hand full vadi (urad Dal)
  8. Take 1 tbspn mustard seeds
  9. Get 1 teaspn Poppy seed
  10. Take 1/2 teaspn celery seeds
  11. Prepare 1 wole red chilli
  12. Get 1/2 tea spoon turmeric powder
  13. Take To taste salt
  14. Get To taste sugar
  15. Prepare 2-4 tbspn oil
  16. Get 1- 1/2 cup water

Among all the types of shukto the most popular one is the dudh shukto, here milk. Shukto is a traditional dish from the Bengali cuisine prepared with very minimal spices and combined with all the vegetables. Shukto is a mix of vegetables with an emphasis to the bitterness, is a preparation where instead of hiding the bitterness, it is the taste that actually the dish evolves. Shukto which people from opar bangla or Bangladesh call shuktoni is actually the result of Portuguese influence from colonization in the pre British era when the use of milk in a savory vegetable dish was tried.

Steps to make Shukto:
  1. Cut all the vegetables into cubes
  2. Make a paste of mustard and Poppy seed and keep aside
  3. Fry the vadi in a heated pan with oil and keep aside
  4. Now add oil to the pan and fry the bitter gourd keep aside
  5. Now add celery seeds and a little bit of mustard seed along with the red chill
  6. Add all the veg slices except bitter gourd fry well.
  7. Add salt and turmeric and fry well.
  8. Add water and cover it.keep it on low flame
  9. Add bitter gourd and the fried vadi at this stage
  10. Once vegetables get soft add the mustard and Poppy seed paste,sugar and stir well.
  11. Now remote it from heat and serve it with steaming rice
