In this chicken version of traditional osso buco, chicken thighs are simmered in a heady tomato sauce, then sprinkled with zesty gremolata and served on a bed of Gruyère-laced polenta. To Serve Chicken Thigh Osso Bucco. To serve, place the chicken thigh osso bucco on top of creamy mashed potatoes (or polenta). Spoon some of the leftover sauce and veggies over the top of the chicken.
Steps to make Chicken ‘Osso Buco’:
- Finely dice Carrots, Celery, Onion & Garlic.
- Season the chicken & lightly coat in the flour.
- Brown the chicken in a hot pan for 3 mins on each side then set aside. Turn heat to medium.
- Add the vegetables & herbs, cook for 8 mins still starting to soften. Add tomato purée cook for a further few minutes. Turn up heat & add white wine & reduce by half.
- Add tomatoes & stock & bring to the boil.
- Place chicken back in the pan & simmer for 20/30 mins. When chicken is cooked on point remove & set aside. Boil sauce rapidly till it starts to thicken.
- When ready season & serve with lemon zest & parsley
An inexpensive alternative to the more pricey veal. The longer it cooks the richer the sauce gets. I've never cooked it in the crock pot but I suppose you could. My husband is not a fan of dark meat chicken but in this recipe you would think you were eating veal.
