Steps to make Simple macaroni cheese:
  1. Cook the pasta in salted boiling water for 1-2 minutes less than what it says on the pack. Save some water at the end.
  2. Preheat the oven to 200°C.
  3. Melt the butter in a large pan, at origano and stir.
  4. Add the pasta to the pan and coat it well with the butter.
  5. Add a couple of spoons of the water from cooking the pasta and remove from the heat.
  6. Add mascarpone, taleggio and 100g of parmesan to the pan.
  7. Heat it up again and stir till the cheeses are melted. Add more pasta water if needed, to get a thick sauce.
  8. Transfer the mix to an oven proof dish and season with nutmeg.
  9. Cover with mozzarella, the rest of the parmesan, and a pinch of pepper.
  10. Pop it in the oven for 10 minutes. Turn the grill on for the last 3 minutes.
