  1. Pretty heat an oven to 220°C/200°C fan.
  2. Quarter the tomatoes and place on a baking tray. Drizzle with olive oil and season with salt and pepper. Then place in the oven for 20-25mins.

  9. Once the tomato soup is cooked. Take off the heat and use a hand blender to blend it into a smooth soup. Return to a low heat to heat through and add some basil to your taste.
  10. Once warmed through, serve with the croutons on top.
